Overwhelmed by red currants I attempted making jam for the first time in my life. I was unaware of the dangers of overboiling it (I gave it a few extra minutes ‘to be on the safe side’) until my mother explained that this could make it set like toffee! I was therefore relieved to return from post-jam-making business trip to find it had set at a firm but spreadable consistency.
After all the time it took to pick the damn berries I would have been very upset if I had to chuck out the attempt.
