Japanese dinner
One of my New Year challenges to myself was to be able to serve up a full Japanese meal. I feel like I'm getting there. This is prawn gyoza and noodle soup with a miso tare (the base), topped with spring onions and nori.
A lot of Asian food is about the balance of sweet, sour, salty and spice and I'm slowly getting my head around which ingredient does what from my Japanese store cupboard.
New ingredients used: tobanjan- excellent spicy broad bean paste and mirin- sweet rice wine.
