Apparently the pinking is an accumulation of anthocyanin a water soluble pigment that depending on the pH may appear red, purple, blue or black. The colour in the cauli is exaggerated by sun exposure and judging by the price of these beauties on the shelf this is the next big thing and the colourful cauli.
