pusscats were given this at Christmas and every so often one of them starts dive bombing and playing in a frantic way.

what to do on a cold wet day, my first experience with riced cauliflower:
Riced cauliflower and avocado sandwich
I came across this a few days ago and gave it a go today.
Preheat oven at 200C
Rice half a cauliflower - I used the food processor to break up the cauliflower, looks like rice. Bind together with an egg, large tablespoon of ground almonds, salt and pepper. Divide the mix into two placing each onto parchment paper on a baking tray, form two square shapes about the size of a slice of sandwich bread, cook for approx 20 minutes @ 200C.
Mash an avocado, spread onto one ‘slice’ cover with the other. Gently heat a little oil or butter in a pan, sauté sandwich on both sides, couple minutes per side. Serve.

It was better hot, needed S and P on the avocado, interesting combination of flavours. I thought a little bacon in the avocado would benefit the finished taste.
