The perfect??
One of my favourite columns in The Guardian is Felicity Cloake’s on food called ‘The perfect’ where she tests several recipes for the same dish, and comes to a conclusion on the best one. I’ve found a few favourites that way ( cornbread, marmalade cake) not always the final recipe she has suggested!
So in wanting to make perfect crackling, the tip she suggested was making the skin really dry before you put it in the oven... and using a hairdryer to do that once you had massaged salt into the pork ‘ in the manner of an exfoliating massage’ .....
Was it perfect? Was it worth the weirdness? I’m not sure, but it made M smile!
