lemon, smoked garlic & mint mayo

to go with a lunchtime lobster salad.

(an old family friend rang yesterday evening to see how i was doing.  he was an angelic pageboy at my parents' wedding, my mother's godson, who she spent months helping his mum to nurse back to health when he was shot during the Troubles. his father was a Battle of Britain pilot - so he knew how to fight.  such a funny and brave man).

when i told Bill what i'd been making for lunch he said i must have been making mayonnaise because mum always used to do that when the rest of the assembled guests were sitting out in the garden doing the crabs.

The Good Morning Canary Recipe for Lemon, Smoked Garlic & Mint Mayo
for 1- 2

2 tbls Helman's Olive oil Mayonnaise
(i was going to make it from scratch but couldn't justify the use of oil for just me at this time)
1 tbls double cream
2 cloves of smoked garlic (it's very mild, so 2 is ok - i might even go 3)
the zest of half a lemon
a sprig or two of fresh mint, washed and finely chopped
salt & pepper
adjust all amounts to taste and numbers.
i ate about half the amount i made.
