Beef Stew

Beef stewed in red wine with Nyons olives on cauliflower rice. Wine: the rest of last night’s Rioja.

This was my first attempt at a cauliflower rice—I had a head of cauliflower that needed eating. It worked but is no replacement for proper rice. The stew was nice, and the wine drank better tonight than last night.
