Turkey
Roast turkey (served with broccoli and salad).
I had a couple turkeys in the freezer since they were on clearance after Thanksgiving, and I finally got around to roasting one of them. I have learned that spatchcocking turkey is really worth it—it greatly reduces the cook time and the breast and thighs both end up well cooked.
