My mum lives in England, about 5 hours drive away, and so we don't see her very often but whenever we do she always makes us a jar of lemon cheese - it's her signature preserve! Because of lockdown it's been a long time since we've been able to see mum and so I though I'd give it a go myself. Mary Berry recipe, turned out not bad.
