A meal with Legumes or Lentils for the Vegan Chall
I am fond of certain foods like vegetables and fruit, pasta, pizza and bread. Yet when it comes to lentils I am not so convinced. The Food Doctor book is brilliantly helpful at times like this. Written by experts in nutrition, Vicki Edgson Dip ION and Ian Marber Dip ION, they have included a really good chart of foods their nutrients and benefits.
Lentils contain calcium, magnesium, phosphorus and they are a rich source of potassium, zinc and folic acid.
Lentils are a good source of minerals for nearly every organ in the body.
They neutralized acids produced in muscles.
