Emptying the fridge
The boys often feel that ‘there’s nothing to eat’ - moaning about an empty fridge when I can see lots of meal potential.
Combining a couple of courgettes, some left over salmon, ricotta, lemon zest, an egg and some pastry resulted in these delicious tarts. I also made a huge pot of veg and lentil soup which we’ll have with a squeeze of lemon and some mint from the garden. I can also see everything we need for a salad nicoise, and virtually everything for a spanakopita and a red cabbage, carrot and spring onion coleslaw.
Youth of today eh!
