Sticky toffee pudding, courtesy of Rick Stein's Food Heroes cookery book. There are numerous good things about this pudding, aside from the obvious ones. The recipe purports to serve 6. My picture is a quarter of what was left over after 5 of us had it for pudding yesterday - its enormous, which means you can have large portions, and even seconds, without feeling guilty. Its easy, and foolproof. The toffee sauce is to die for, and the addition of a large quantity of dates means, again, pleasure without guilt (fruit is, as we all know, very good for you).
That, with fish cakes for main course, was the best bit of my day.
