Pumpkin Pie

Happy Thanksgiving!
In honour of the day, any excuse for a lockdown holiday celebration, I achieved two firsts for dinner - firstly I made nut loaf to the excellently cheesy recipe of my American friend and secondly I made Pumpkin Pie...considering vegan substitutions were made it all turned out very well!
