Sprout risotto

Who knew this was a thing?  I certainly didn't.  I know there are plenty of you out there who will shudder at the idea, but we are both sprout lovers.

I was participating in a flute Zoom session from 6 till 7 in the studio, and on returning to the house, W had made a risotto.  He'd originally been planning to cook one with butternut squash, but on realising that we had a slight glut of sprouts, he had checked online and found a recipe for sprout risotto.

He had to substitute Cambozola cheese for the requested Gorgonzola, and unfortunately the lemon in the store cupboard turned out to be past its best, so there was a dearth of lemon juice and zest.  But it was rather nice.  The kalettes "on the side" we felt to be an appropriate addition, and added some colour to what was otherwise a rather pale plate.
