A better take on carrot cake

Hurrah - found another use for my juice pulp.

They normally get saved up for crackers but today instead of grating a whole heap of roots I subbed some with the pulp I hadn't used. Other than that the cake contains some nuts and dried fruit and the all important spice mix. Frosting is cashew based.

Think it turned out quite well (tasted good, anyway) so I shall continue to do it this way.
