Fun with Food
Cedarville Farm brought something new to the March 16 Bellingham Farmers Market monthly winter market -- locally-grown organic Belgian endive!
Farmer Mike was proud of this new offering and when I asked him about ways to use it, encouraged me to try Belgian endive with a mild white cheese and citrus. As today's cloudy weather wasn't very inspiring for a blip outside, I decided it was a good day for playtime in the kitchen with my new food "toy," so I filled the endive "boats" with goat cheese and topped them with carefully-cut sections of a clementine.
The result was beautiful and very tasty -- I'll definitely be making these again!
