Vegan coconut and walnut chocolate truffles.

The Feast Day of Our Lady of Knock. Ireland.

Our weather is overcast and dry.
From time to time it becomes sunnier. 20c indoors.
This morning it was rainy so the cameras stayed indoors.
I took this photo yesterday.
The recipe credit goes to Jamie Oliver for Non Dairy Chocolate truffles.
The main ingredients are 300g of dark chocolate, three tablespoons of coconut oil, Tesco sell it in a jar, 240mls of coconut milk but I used Oatly Whole and it was good. Snap the chocolate bars and place in a bowl over a pan of boiled water so it easily melts.
Also 1 teaspoon of vanilla extract.
All these ingredients are mixed in a big bowl and then put to set in the fridge, covered with cling film for four hours.
Then using a scoop, melon ball maker or teaspoon, shape the set truffle chocolate into little balls or any shape. It could be small log shapes. Have dessicated coconut spread on one plate, cocoa powder on another and chopped walnuts or any other nuts eg peccan finely chopped. I remembered some people are allergic to nuts so you would not use nuts for them. Gently roll the chocolate truffle in one of these plate ingredients to coat it. Then place each one in a paper small cake baking case.
Chill in the fridge at least 10 minutes. Mine are still in the fridge.
The quantity of ingredients can make 45 small truffles. I made 30. I am not sure how long they last. They taste very delicious but are rich so avoid chain eating them.
