Frugal food

This is a recipe my son gave me - spicy root vegetables and lentils - back when he was still a student. He soon learned to budget more carefully after getting into debt in his first year.  One time he came back for the holidays and said to me ‘mum, if you are what you eat, I’m a lentil’ - he made me laugh. 
I can make a huge pan of this for about three pounds - and freeze about 10 portions. Various reasons to eat a bit more frugally - food prices are going up scarily fast, my pension isn’t too brilliant, this uses a lot less gas. And most of it is local food - except the lentils and the sweet potato. The best thing is it tastes really good:)
