Sheet pan Veggies

I don't really like to cook. I mean like not every day. So I bake this whole sheet pan of veggies and we have them for three or four days. Red onions, bell pepper, carrots, zucchini, sweet potato, Brussels sprouts and cauliflower gnocchi. Come on, that's a ton of veggies. I toss them in pesto and olive oil. Bake, then sprinkle with Parmesan cheese and drizzle with basaltic glaze.
