Toad in the hole

A very anxious and upset mum led to a very disruptive day! Most of the day spent on the telephone or writing emails to sort out electricity bills, her ongoing shower problem and various other niggles. At least by the end of the day mum had cheered up and I felt like the day wasn't a complete write off! 
I did manage to make a mustard toad on the hole with some lovely veg which we both enjoyed so all's well that ends well. Mum is off to a dear friend's funeral tomorrow, Wednesday so another upsetting day for her, then Thursday she is having some treatment at the dentist. All in all I think she'll be pleased to see the back of this week!
