Monday Roast...

We haven't had a roast in ages... This is a rolled Chicken with apricot and cranberry stuffing... The bit I enjoy the most when I do a roast it the pumpkin and sweet potato, so yummy... Sometimes I don't even have the roast I just eat a plate full of vegetables...
