Courgette Frittata
From my new Ottolenghi Simple cookbook. Still using up courgettes. I annotate my cookbooks with the date I made it plus comments, what I had to substitute and improvements. There quite a lot of notes on this one. I made half quantities to for three rather than six but the resultant three eighths of a teaspoon of cumin wasn’t enough seasoning nor one clove of garlic. We resorted to HP. Heresy. The texture was nice and light so I might give it another go next year and tackle the maths to divide the quantities down to a third rather than half
