Saturday: Owl Butterfly
We had to tear ourselves away from our addictive jigsaw this morning for our outing to the butterfly farm. P&J loved it (as do we, but we’ve been before so knew what to expect). The butterfly house was teeming with activity, it’s very peaceful and calming. We also sat and watched the hummingbirds for some time - they’re actually quite territorial and will think nothing of chasing each other away from the feeders.
We had intended to go to ‘Trey’s’ for lunch but, unfortunately, it was closed so we introduced P&J to the glamour of the bus station and Belize’s national dish of stewed chicken, rice and beans.
For our New Year’s Eve dinner K cooked us up a storm of a roast beef dinner. We’ve really struggled with our Yorkshire puddings here as they steadfastly refuse to rise but today we added a spoon of baking powder and, voila, we had magnificently fluffs of Yorkshire pudding.
We didn’t see midnight in, opting to miss it by 20 minutes. There were some half hearted fireworks around but nothing very spectacular.
I always like new year with the promise of possibilities ahead. K and I are agreed that 2022 was certainly one of our most logistically challenging, and somewhat stressful, years.
