Monsters lurking in the garden

I had forgotten that I planted a cucumber plant as the squash and pumpkin plants covered most of the garden bed. However when I looked to see if there were pumpkins growing I found a giant cucumber, then two more. I am told that cucumber soup is a possibility as is roast cucumber. They would make a lot of cucumber sandwiches but not sure what I would do with those either. Another sandwich vicar?
