Inspired by dandelions

There were thousands of them along the lane this morning and the seeds must run into millions! I have seen fields full of their bright yellow flowers.
I wonder if there is a way we could take advantage of this prolific plant? I did have a friend once who tried to make a coffee substitute out of the roots, a bit like chicory.
And there is always dandelion wine!
