High speed!

The baking day is upon me. I made an early start with the extra tall 6” cake, which took an hour to bake. Next the first of three 12” sponges. The volume of batter needed was immense, nearly filling the bowl of my mixer with 400g of butter alone. This also took well over an hour to bake. The three 9” sponges smell delicious, they have orange and lemon zest. The recipe I am using has a good spoonful of Greek yoghurt in each sponge, which makes the cake rise well and is also extra moist and delicious.
That took most of the day! Tomorrow, on to the icing…..
