Salmorejo
Perfect lunch for the hot days.
A Spanish variation of gazpacho, made with tomatoes, bread, garlic and olive oil, served ice cold, and garnished with hard boiled egg, jamón serrano, and green bits, like chives and basil. We buy the salmorejo ready made, in a carton, like milk.
We didn't actually have lunch outside, far too hot, this was just for the photo. We did, however, have supper out there, under the fairy lights, a cool breeze blowing. The heat is moving over to Spain, and they are welcome to it.
Gratefuls:
- our support group, who are brilliant at doing what it says on the tin
- getting most of the cooking done for tomorrow; Mike helping with the logistics of using the oven in the caravan, to not heat the house
