Black mustard seeds

Probably Brassica nigra

Why are they not black I hear you ask?

I used them to make a Gujurati carrot salad devised by Madhur Jaffrey.

Usually the seeds are tossed in hot oil and the whole pan of oil and seeds poured over the grated carrot.
But if one’s diet precludes seeds, then just strain out the seeds and use the infused, hot oil on the carrot. Add salt and lemon juice.
Simple but tasty.
