Lemon curd and gingerbread cake
I finally got my baker’s hat on today to make the gingerbread cake and lemon curd with lemons I grew. I was a little disappointed in the gingerbread cake as it just was not “gingery” enough. I was expecting more of a taste like ginger snaps but it was mostly spice cake.
The lemon curd was good except for the little white flakes. Cornstarch did not dissolve well. My fault as I should have mixed it in with the sugar. I could eat a bowl full!
I also got some pre Thanksgiving food prep done. Now it is time to sit and read.
