Did you ever eat syrup on a slice of bread when you were young?

Can anyone explain the science that makes the bread go crispy? 

I didn't have a syrup sandwich to me tonight. I have been making rocky road.  It's.immense. 

Tomorrow I'll.bag it and it will drop into Santa bags
