Lemon icebox pie

A family tradition made with sweetened condensed milk and lemon juice, a cookie crust and meringue. My older brother always makes one for Thanksgiving and will probably make one for Christmas too. My dad was the instigator of this delicious tradition and we try to keep it going.

I've had to modify it to make my own sweetened condensed milk out of goats milk (which turned out wonderfully) and I use gluten free ginger snaps for the crust. Last year we had a power outage and I was trying to make the pie with the generator hooked up to the oven in the farm house. Needless to say, the end result wasnt the best.  Here is the blip (in the extra) of me with my winter gear on in the freezing house trying to make pie...lol.
This year it has gone much more smoothly and it looks delicious. I will probably have some for my Christmas breakfast.
