Feta and Roasted Vegetable Tart

This was our tea tonight - a Feta and Roasted Veg Tart from the wonderful bakery in Castle Douglas called 'Earth's Crust'.

I'm sure, in theory, I could make it myself - if only I could work out how he makes his mouthwateringly tasty pastry ........................?
