Meatballs

Lamb meatballs with rose, ginger, cumin, and kalamata olives; white rice; and carrot salad. Wine: e11even Rock Hollow Vineyard Petite Sirah 2017.

The meatballs came out very well. My gluten free substitutions are also getting more sophisticated: in place of bread, I used equal parts almond meal, potato flakes, and hemp hearts (the result was actually superior in tenderness, moisture, and cohesion than bread). I picked a forceful wine to stand up to the lamb which proved unnecessary, because a bit of labneh in the meatballs subdued the gaminess.
