Tomatillo

You don't see these fruits in the greengrocer that often, possibly because their uses are largely limited to Mexican food.

Although they look like tomatoes, they don't taste like them and are more closely related to the cape gooseberry.

To mark ten years since I went to Mexico, I decided to make a salsa verde. I did my research and found what I thought was them most authentic recipe. The result tasted good but nothing like the sauce I remember. 

Mexicans dry roast their vegetables then puree then before cooking. The result is entirely different from sauce made using French techniques.
