Kerrygold Dubliner cheese.
I had an interesting dinner which I thought I took a picture of... turns out I didn't. A picture of dessert will have to suffice. I made sous vide ivory king salmon with sides of edamame and white rice with beet greens and leeks. I was curious to try this type of salmon. It has a recessive gene that causes it not to absorb carotenoids in its diet, so the flesh is an ivory color instead of the typical salmon color. This also changes its flavor. Unfortunately, it turns out the flavor change is not a terribly good one. It ends up tasting like an a rather oily white fish in a mild but still undesirably fishy direction.
