Rice and Beans

Rice and beans with corn, sweet potato chips, and double Gloucester cheese with onion and chives.

So far we have had breakfast and one other meal on the boat every day of our canal trip. This wasn't strictly planned, but rather we knew we wouldn't always happen to be near restaurants at meal times. Our provisioning for the boat has been limited by availability of stores (and what would be reasonable to purchase for a short trip--no full batterie of seasonings, for example), the low-powered boat fridge (perishables not advised for more than two days), and what can reasonably be prepared in the boat's galley. This was one such meal: a quick lunch assembled while moored at Blake Mere in Shropshire. It was made with pre-cooked rice, canned beans, canned corn, and Nando's medium hot sauce (my only seasoning on the boat aside from salt). The cheese was the highlight though not as good as a Shropshire blue we finished a couple days ago. Passable and convenient though admittedly not great. We had dinner at a pub in Whitchurch where we are moored for the night (which, alas, was poorer fare than lunch).
