Vegetable Haven

An overcast day. I roasted beetroot for the first time today as I’ve a number of very large beetroot from the allotment that need using. It was delicious and I’m wondering why it has taken me so long to cook beetroot in this way. I also made a courgette cake and it too turned out well. It has walnuts and sultanas in it as well as courgettes. Just before dinner I popped to the allotment to do some picking, I came back with apples, courgettes, beetroots, cucumbers and plums.

- To sort out what I’ll wear to a family wedding later this month. I’m so used to wearing dog walking and gardening clothes….
- To eat the first few ripe tomatoes from the garden. They are struggling as they aren’t in a greenhouse and we haven’t had much heat and sunshine.
