Tasting better than it looks
Now that our development team split, there are two stand-up meetings each morning to attend. It keeps me on my toes first thing in the day, which means there is a lot more ticket writing at present, keeping me pleasantly busy. It does mean there is a little more people-chasing to do as I need more answers, but we only have one blocker now and that will be sorted soon.
I decided to cook a roasted cauliflower and mushroom pasta dish in the evening. As I am home alone until tomorrow, I thought it would be an excellent way to fill some time and have some meals ready. I started a couple of large bags of groceries from Waitrose.
I am generally happy when I need to prepare dinner, but I go for simple to-prepare meals. During the last year of the pandemic 'stay-at-home', I made almost everything from a one-pot cookbook, which was quite simple. Tonight's dish was the opposite: it started with ricing a whole cauliflower and got more complex. We only have a small device for a blender, so I was 'whizzing up' small batches. But it all came together and was delicious even though it looks unappetising.
Because I had to use the whole cauliflower - and it was quite a big one - I ended up with about eight portions: the quantity took me by surprise when it came together in the pan. Some will be eaten later in the week, and I'll put some in the freezer.
