I don't normally make cakes in July or August as it is too hot and the high humidity generally means that the icing will not harden. However, a friend asked me to make a cake as a present for her friend who is celebrating her 25th wedding anniversary. It took me two days to make all the roses, which have been dusted with edible silver powder, so they have a silver sheen to them, and I've spent all day today assembling the cake. Originally I had a disaster, I made the sponge cake and unusually for me it sank in the middle, much to Roys delight as it meant he had cake to eat. I then set too and made another sponge cake and this turned out perfect. I just hope the recipient likes it.
