Get Ahead

After the delights of last night, I decided to get my Christmas Gravy started.

We talked last night about the complexity and multiple processes necessary for each dish. My make ahead gravy is like that, layers and layers of flavour added to the pan, each given their own time to infuse. Roast the chicken wings with vegetables, add herbs, scatter bacon, add the port, flour, mash it up, strain, and cool.

I hear my mother saying where's the oxo, the Bisto. I occasionally give in and add an oxo just to please her.

The smells were amazing. It's in the freezer now awaiting the juices of the bird.

The rest of the day has been full of doing things I have no time for, but which are raising their heads, insisting I attend to them.

Time to soak the cake again. It's got half a bottle of spiced rum in it. I think it should be eaten through a straw.
