Pasty pastries

Paul Hollywood would not be impressed. I used his mince pie recipe, which I know someone else has used very successfully, and even cooked them for 3 extra minutes as they looked a bit pale, but about half are too soft and a bit underdone. The pastry is a bit thick but I also somehow ended up with quite a lot of extra dough and filling so I don't know what I've done wrong. Perhaps a bit of everything!

Thank goodness that the half that did survive are tasty.
