An old new recipe

Thanks to Melisseus Blipping some Swaledale cheese a few days ago I have discovered an old recipe in an online homesteading site, which I jotted down. 

I adapted the quantities from 5 gallons to 5 litres of milk, and changed the amounts of culture and rennet correspondingly. And this afternoon I began the process of making it.

As I Blip the rennet is setting, so there is a long way to go before it even looks like a cheese (sometime tomorrow morning) and longer still before it will be ready. Depending on what qualities I want from the cheese, it can be eaten in a month, or a year. It is one of the simplest cheese recipes that I've come across and hopefully it will give me something delicious.

The sun has been out all day, and other than cheese and a dog walk it has all been about watering and grass control. And getting two loads of washing dried on the line.
