2025 Sunday — Tacos

On the second Sunday evening of January, I had zero desire to prepare dinner and even less of an idea of what I could make. I thought maybe my fairy godmother might show-up, put on her cute little apron, step into our pantry to inventory the possibilities, swing open the refrigerator door, and whip up something out of nothing. Then I remembered that I’m the fairy godmother at this casa.

So I stepped into the pantry, closed the door, stood there in the darkness saying a prayer, opened the pantry door, and believed I could.

I found just enough low-sodium flour tortillas and zero-sodium corn tortillas in the refrigerator, along with shredded cheese, a fraction of a leftover tomato, and plenty of onion. I diced the onion, tomatoes, and warmed the skillet to brown the tortillas into shells and some would say, “Almost like magic dinner appeared.”

This is one of our favorite “at home meals” and it revives wonderful memories of the many years we used to have “Jr. High Unlimited Bible Rap” in our SoCal home and previous to the 35 or so jr. highers arriving for study, we’d serve homemade tacos to six or so kids we’d invited for dinner. That was our Wednesday night for years.

Tonight the only jr. highers who showed-up were in our memories — and there were lots of them. Mr. Fun & I thank God for jr. high kids; God used them to sharpen our lives. We also thank God for tacos.
