Chocolate Chip Cookies and a Long Walk

My son and grandkids came over for lunch today. After lunch, I suggested that we try making gluten free chocolate chip cookies. You might remember that I was diagnosed with Celiac disease a few months ago. A friend of mine has embarked on a mission to bake bread - regular wheat bread that is, but he reminded me how much I used to love baking bread. So I decided I needed to learn how to start baking gluten free breads and other baked goods.

The kids were thrilled to help - my youngest, only 7, is a phenomenal reader, so read the recipe to me and his 11 year old sister. And they did all of the measuring and mixing. Super cute! The finished product was pretty tasty, although I think that anything with a stick of butter, a cup of sugar, and chocolate chips will likely taste pretty good. See extra for the kids posing with their cookies (well, Lucien seemed to think that he needed to hide his cookie for some unknown reason!).

I went for a nice, long walk at the Tualatin Hills Nature Center, where I go frequently. After the rains of the past couple of days, the river was overflowing and the paths muddy. But it was nice to get out while it wasn't raining!
