2025 Thursday — Lunch at the Shine

A long time ago we started referring to the Sunshine Restaurant as “the Shine.” For approximately 2 1/2 years we practiced a vegan diet. It was during that time we frequented the Sunshine Restaurant every couple of weeks to get a meal out.

Today we were out and before heading for home, we decided to get something to eat. So we both agreed that a black bean tostada, one like we used to get at the Shine, would be delicious. It was delicious, but it was entirely too much food. We decided next time that we’d split one. Not sure when the next time will be, but that’s what we’ll do.

This entire day was cold and cloudy. No sunset this evening. Other than a little messing with yard art in the backyard, we mostly stayed indoors to enjoy the warmth.
