Peach Melba

We had lunch at our new local bistro, opened by a chef who used to run the Savoy restaurant - and he told us the story behind the Peach Melba.

Apparently Auguste Escoffier, the first (and very famous) chef at the Savoy in the 1890s, had a soft spot for an Australian opera singer called Nellie Melba and he would create amazing dishes to be sent up to her room in the hope that she would "notice" him... The peche Melba did the trick!

Our chef brought this one along for us to try - and it was delicious, I can see why she was won over (mindyou, her version was served on the back of a swan sculpted in ice!).
