Sundried

Tomatoes are very cheap in the Netherlands right now. I remember when my children were little hearing mass production of tomatoes being described by Garrison Keillor as a kind of agricultural strip mining - lots of production but not so much flavor.

So to take advantage of cheapness we of course decided on sun-drying - just one problem - not much sun and not really dry weather.

so we are sun drying in the oven - cheapness now fully defeated by needing the oven on for about 12 hours - although at a low temperature

Smells great - lets hope it concentrates the taste -

next week recipes for 2 kg of sun dried tomatoes I guess
