Veg

I never seem to get round to making anything out of the River Cottage Veg book; mainly as I never have the ingredients the recipes require. I also have a rocky relationship with aubergines, so when I was given two from my Aunt's garden, I turned to Hugh. Just before I took this picture, I'd realised that I didn't have any garlic, or the right herbs for the 'Aubergine boats', so I quickly adapted it- turning to the roasted potatoes and roasted aubergines recipe. Better luck next time.
