Hummingbird Cake

I used to bake a lot, but I lost my baking mojo a bit sometime last year.

I made a huuuuge effort last week and made a basic carrot cake, the kind that you don't even a recipe for, and everyone was so pathetically grateful and disproportionately complimentary that I felt guilty.

So I made this today. A Hummingbird Cake with pecan, pineapple, banana, cinnamon and cream cheese filling. I even put icing sugar and powdered chocolate and cinnamon on the top.

So, for once, I didn't feel guilty when we watched The Great British Bake Off.

Al very much liked the look of the custard tarts and would like to try to make some. I've never even tried one; they always look so unappetising, but custard, pastry, nutmeg, what's not to like?
