Stuffed Chicken

Stuffed chicken breast was something new for us. We saw some already prepared in the meat case at the grocery store, thought they looked good, and decided to try our own. We scoured our refrigerator for ingredients and set to work.
We sauteed onion, mushrooms, roasted peppers, garlic, and asparagus. Added a little red wine and chicken broth. Cut a pocket in the side of the chicken breast and spooned in the filling.
Browned them in an iron skillet, covered with foil and baked in the oven for 30 minutes. I had intended to put cheese inside, but forgot, so I put it on top and put the chicken back in the oven until the cheese (combination of Emmenthaler and feta) was melted.
Removed the breasts from the skillet, added more wine and Bragg's (like soy sauce) and reduced a little then poured it over the chicken.
We were happy with the results and have leftover for tomorrow!
